Hi, experimenting with a simple buffer (figure on the left)
I come out taking the signal from the source of a biased fet (figure on the right)

Seems to me that it is a way to improve the sound... but I don't know whether it is only my feeling or the two circuits are really different.
Any comments/explanation is appreciated.

It depends on the value of the drain resistor and the power supply.
If the resistor is not too big (hundred of ohms) and the supply is properly filtered and (optional) stabilized, then you should not have any significant difference.
If the resistor is big enough to decrease the current through the JFET, it'll change the operating point.
If the supply is bad, the circuit on the right has an additional supply voltage smoothing stage, so less noise.
