I have some extra 3pdt switches. Can anyone help me connect one to turn off/on my dying battery simulator?

You don't need a 3pdt switch for that. A SPDT will be sufficient.

Uh, then you just use one third of the switch and leave the other 2/3 disconnected.

Do i wire it to the pot or the dc jacks, or both?

it's simple: use 1/3 of the switch
3PDT is (almost) like three SPDT switches connected together in one package.
