Hi,
I'm thinking about making a headphone amp that takes a balanced input. Essentially, it's for an in-ear monitor. My question is, can I just put the a balanced signal from an XLR straight into the a headphone OpAmp or do I need to ReAmp the signal first and make it unbalanced?

XLR from a mic? You need a Mic Pre-amp. Designing one that is not noisy is not trivial. THAT corp will sell you one "on a chip" for a very fair price. Buy one of those.
XLR at line level? I'm no expert, but the benefit in balanced signals is in long cable runs, not inside the circuits. I'd look at what's being discussed in this thread:
