If I cut these sockets I have that are to large into 14 and 8 pin sockets will they work? Is each socket pin separate from the other, or are they all connected?

The pins are not attached to each other, so go crazy!

Yep, you sure can. I've done it plenty of times. Got a good deal on 16-pin sockets, but I use 14-pin ICs more frequently.

Check these out: http://www.taydaelectronics.com/servlet ... Categories if you find the cutting doesn't go as planned.
