They are not grounded, they ARE - Vref.
As I've mentioned before, for some reason on the Mike's schematic they have used the earth ground symbol
to indicate virtual ground points (Vref) , and -V to indicate ground.
For some reason Mike's schematic use bipolar circuit symbols +/-V and GND.
Bernard's schematic use singe supply circuit symbols V, V/2=Vref and GND.
